First, thanks to everyone who read my last post and for all the comments!
It feels so good to know that I am surrounded by such an awesome group of bloggers out there. :)
I finally heard back from the Rheumatologist on Friday to schedule an appointment.
I'm going in early Wednesday morning to meet with the doctor, and...well. I guess go from there?

Sadly, Ryan isn't able to go with me since he's been slammed with meetings at work and can't get out of it. :( Thankfully though, my Mom is able to come.
Cause goodness knows, it has to be one or the other in cases like these.
I really don't know what to expect, and honestly, after I made the appointment, I got nervous.
I wasn't before, but I kind of am now.
So if you have any extra prayers, thoughts, or well wishes, I'd appreciate them! :)
Now I normally don't do menu plan posts on my regular blog, but rather on my cooking blog.
BUT....I haven't been on there in a while.
So here it is!
Keep in mind that this is more than likely going to last us a couple weeks.
I have a few main dishes I have planned, but they're repeats, so I'm not going to post them.
{ Spicy Honey Chicken }
We don't have a grill, so I'm going to have to improvise on this.

{ Crock Pot Pork Tenderloin }
In the crock pot as I type. :)
via.
{ Slow Cooker Pulled Pork }
Made this last summer, and it was so good!
I also found a couple recipes I found in some magazines that I wanna try.
{ Apple Glazed Meatballs }
{ Turkish Burger }
I'll be sure and post them if they are as yummy as they sound.
Now I've also been in an intense snack mode. My Father in Law made some yummy salsa from his garden, and I've been devouring that. I've even had it for lunch a couple times.
Plus since we have an abundance of some veggies due to Ryan's Dad and the Farmer's Market.
So here's some snack items I'm planning on making as well.
{ Crispy Parmesan Zucchini Fries with Marinara Dipping Sauce }
via.
{ Skinny Poolside Dip }
{ Ranch dip using Greek Yogurt }
via.
{ Cinnamon Almonds }
{ Cucumber Salad }
via.
{ Salsa }
Going to try making my own from scratch!
via.
{ Macaroni Salad with Tomatoes and Zucchini }
I'll more than likely use this as a side dish for a couple meals.

And of course, we can't forget dessert!!
{ Zucchini Brownies }
Minus the frosting. I'm not a fan of frosting on brownies.
I'm weird.
I'm actually making these today! I've made them before and they are delicious and so moist!
via.
{ Applesauce Cupcakes with Brown Butter Frosting }
They're only 50 calories each!
via.
{ Mocha Chip Ice Cream }
Ryan's birthday is next Sunday and he loves homemade ice cream, this one especially!
I got the recipe elsewhere but I'll be sure to post it later.
And that's it.
Whew! I'm going to be cooking up a storm the next couple weeks. ;)
